In this order do the following:
sift all together:
2 c. flour sifted
1 tsp baking powder
1/4 tsp soda
1/2 tsp salt
1/2 c sugar
Add:
3 egg yolks (save the whites)
2 c buttermilk
1/2 c melted butter
Whip the egg whites till stiff and
fold in 1/4 c. sugar

Directions:
Don't over mix or the pancakes won't be light and fluffy. Cook on med. hot griddle, flip when bubbles form on top and put a pat of butter on each. For a real treat top with chokecherry syrup.

You can make these into waffles by adding 1/4 c. of oil to batter. Then cook in waffle iron.
You can use whole wheat flour and raw sugar.
