4 cups chopped cooked potatoes
4 eggs
1/2 cup green pepper
1/2 cup chopped onion
1/3 cup butter
1 cup shredded cheese (any)
1 cup chopped tomatoes
3 or 4 slices, crumbled, cooked bacon

Directions:
Directions:
In hot skillet cook the potatoes, green pepper, and onion in the butter. Break eggs over the top, or soft fry and add on top if you prefer. Top with cheese, tomato and bacon. Cover and steam until eggs are done.
