Dressing:
Juice of 2 oranges plus zest of one orange
1/3 cup mayo
2 Tbsp. stone ground mustard or Dijon
1 clove of garlic minced or pressed
2 tsp. sugar
Salt and Pepper (1/4 tsp. each)

Salad:
Baby Spinach or Any Greens you like
2 cups chicken (I use the precooked ones and bone)
1 cup diced celery
2 medium apples – cut into small pieces
1/2 cup onion
3/4 cup dried cranberries (raisins okay)
1/2 cup toasted pecans (I use the toasted almonds in the salad section)
Orange wedges (or canned mandarins)
Croutons

Directions:

Dressing mix everything together, until ready to serve.
