2 medium onions, chopped
3 green onions, chopped
1 medium bell pepper, chopped
2 stalks celery, chopped
1 1/2 sticks margarine
1 tbsp. flour
1 tsp. parsley
Parmesan cheese
1 1/2 to 2 lbs. crawfish tails
1/2 can jalapeño relish
1/2 lb. Velveeta Cheese
1/2 pt. half and half
3 cloves garlic, chopped
1/2 lb. fettuccine noodles

Saute onions, pepper, and celery in butter until soft. Add flour, parsley, and crawfish tails; cook 15 minutes. Add relish, cheese, half and half and garlic; cook 15 minutes. Cook noodles until tender, drain; fold noodles into crawfish mixture, place into casserole dish, and sprinkle with Parmesan cheese. Bake in 350º oven for 15 minutes.
