1 cup (2 sticks) butter
1 cup white sugar
1 cup brown sugar
4 eggs
1 (20 oz) can crushed pineapple
5 cups flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 (8oz) pkg shredded coconut
1 cup candied cherries - chopped

Directions:
Directions:
Cream together the butter and sugars. Add eggs one at a time mixing well after each egg. Add pineapple and mix. Sift together the flour, salt, baking powder and baking soda. Gradually add to the creamed mixture. Add the vanilla and mix. Fold in the coconut and cherries. Drop by teaspoonful onto greased cookie sheets.* Bake at 400F for ~ 12 minutes.

*I use Silpats instead of greasing cookie sheets. You can also use parchment paper instead of greasing sheets.
