1 egg white
1 Tablespoonful water
1 pound (about 1-1/2 c) salted, roasted cashews
1/3 cup sugar
1 Tablespoonful mild chili powder
2 teas ground cumin

2 teaspoon coarse salt
1/2 teaspoon cayenne pepper

Directions:
Directions:
Whisk egg white in medium bowl with water until foamy. Add nuts and toss to coat. Transfer to strainer and shake, let drain at least 2 minutes. Mix together remaining ingredients in large bowl. Add nuts and toss. Spread out in single layer on large baking sheet with sides. Bake at 250F for 40 minutes. Stir with spatula and re-spread out nuts. Reduce temperature to 200F and bake 30 minutes longer. Loosen nuts and cool completely. Store in airtight container.
