1 egg white
1 Tablespoonful water
1 pound (about 1-1/2 c) salted, roasted cashews
1/3 cup sugar
1 Tablespoonful mild chili powder
2 teas ground cumin

2 teaspoon coarse salt
1/2 teaspoon cayenne pepper

Directions:
Directions:
Whisk egg white in medium bowl with water until foamy. Add nuts and toss to coat. Transfer to strainer and shake, let drain at least 2 minutes. Mix together remaining ingredients in large bowl. Add nuts and toss. Spread out in single layer on large baking sheet with sides. Bake at 250°F for 40 minutes. Stir with spatula and re-spread out nuts. Reduce temperature to 200°F and bake 30 minutes longer. Loosen nuts and cool completely. Store in airtight container.
