2 cups sifted enriched flour
I teaspoon salt
3 Tablespoons of granulated sugar
3/4 cup Crisco shortening
6 tablespoons water Ice cold!!!

Directions:
In a mixing bowl combine flour and salt. With a pastry blender or two knives cut in Crisco until mixture looks like coarse cornmeal. Sprinkle water over mixture, one tablespoon at a time, and mix lightly with a fork until all flour is moistened. With the hands gather dough into a ball and divide in half. On a lightly floured board roll out each half in a circle 1/8 inch thick and about 1 1/2 inches larger in diameter than pie plate.( I roll mine onto plastic wrap top and bottom. Then you don't need any more flour and it 's easy to pick up and put on pie plate.)For Richer Pastry: Increase Crisco to I cup.

For One Crust: Use 11/2 cups sifted enriched flour, 1/2 teaspoon
salt, l/3 cup Crisco and 3 tablespoons water and follow recipe above.
Orange Pastry-Add Zest of Orange for Refreshing Flavor
Add grated rind of I orange to flour-Crisco mixture. Use orange juice in place of water.
Nut Pastry-Delightfully Crunchy
Add 1/2 cup ground walnuts or pecans to flour Crisco mixture before adding water.
