1/4 cup soy sauce
2 tbsp. olive oil
3 large garlic cloves. minced
2 tsps. Dijon mustard
2 tsps. chopped rosemary
2 tsps. Worchestershire sauce
2 tsps. ground pepper
1/2 cup dark beer
2 1/2 lbs. trimmed flank, hanger, or skirt steak

Directions:
Directions:
Whisk first 7 ingredients in a bowl, then whisk in beer.
Pour mixture into a plastic bag, add steak. Chill one day.
Spray ridged pan with non-stick spray, put on medium heat.
Dry steak and cook until browned and thermometer reads 125º - 130ºF, about 5 minutes.
Transfer to carving board and let rest 5 minutes.
Slice across grain.

It is recommended that the cook drink the unused dark beer, rather than waste it. "Waste not, want not"!
