2 Tbsp. vegetable oil
2 Tbsp. all-purpose flour
1 large onion, chopped
1/4 c. green pepper, chopped
1 c. Ro-Tel tomatoes, diced
1 c. water
red cayenne pepper
1 tsp. salt
2 c. Crawfish
1 can cream of mushroom soup
2 Tbsp. parsley, chopped
3 c. cooked rice

Directions:
Directions:
In electric skillet, combine oil & flour until brown. Add onion, green pepper, tomatoes, water & seasonings. Heat to boiling; simmer for 5 minutes. Add crawfish, cream of mushroom soup & parsley to skillet. Cook 5 minutes. Add cooked rice; stir well and remove from heat. Set skillet at 350.
