2 cups chopped rhubarb
1 1/2 cups sugar
3 cups flour
1 tsp salt
4 tsp baking powder
1 tsp cinnamon
1 cup milk
2 eggs
3 tbsp oil
1/2 cup chopped nuts

Directions:
Directions:
Mix rhubarb and sugar and let stand for 30 minutes. Mix the flour, salt, baking soda and cinnamon together in a large bowl. Combine milk, eggs, and oil and stir into the dry ingredients. Fold in rhubarb and nuts. Bake in greased loaf pan (9 X 5) at 375 degrees for 1 hour.
