3 eggs, well beaten
1 cup salad oil
1 cup sugar
1 cup brown sugar
2 cups grated and peeled zucchinis
1 teaspoon vanilla
2 teaspoons maple
3 tsp cinnamon
1 tsp soda
1/2 tsp baking powder
1 tsp salt
3 cups flour
1 cup nuts

Directions:

Heat oven to 325º. Bake in two greased and floured loaf pans.

May use applesauce instead of zucchini.

Freezes well.
