1 1/2 lbs. lean ground chuck
1 onion, chopped
1/2 c. green pepper, chopped
1 pkg. Chili Seasoning Mix
1 tsp. salt
1 - 15 oz. can tomatoes, chopped
1 can whole kernel corn
1 - 3 1/4 oz. can sliced black olives, drained
1 c. yellow corn meal
2 1/2 c. cold water
1/4 c. chopped pimento
1 c. shredded cheddar cheese

Brown ground chuck in skillet; drain. Add the onion, chopped pepper, chili seasoning mix, salt and chopped tomatoes. Simmer 5 minutes or longer. Stir in corn and olives, set aside. Now in a thick bottom pot combine cornmeal, salt and water. Cook, stirring until thick. Add pimento.
Line greased shallow pan or 2 quart (9 x 13) baking dish with part of corn meal mixture. Pour in beef mixture and make a border of remaining corn meal mixture around edge of dish.
Bake at 350º for about 40 minutes. Sprinkle with cheese. Serve with green salad and French bread.
