3 cucumbers peeled, halved lengthwise, seeded and thinly sliced
1/2 cup sliced red onion
1 Tbsp. chopped fresh or 1 tsp dried basil
1 Tbsp. chopped fresh or 1 tsp dried parsley
2 Tbsp. red wine vinegar
1 Tbsp. olive oil
2 1/2 tsp. Dijon mustard
1/4 tsp. salt

Directions:
Directions:
Place cucumber and onion in a bowl. Combine basil, parsley, vinegar, olive oil, mustard and salt ; pour over cucumber mixture. Toss gently. Cover and chill.
