3 eggs
2 c. sugar
1 c. oil
2 c. flour
2 t. cinnamon
1 t. baking soda
1 t. vanilla
4 c. thinly sliced tart apples (gala, harlson)

Cream Cheese Icing:
6 oz. cream cheese—soften
¼ c. melted butter
2 c. powdered sugar
1 t. lemon juice or 1 t. vanilla

Directions:
Directions:
Beat eggs until thick and light. Add sugar and oil. Mix with
eggs on medium speed for at least 1 min. Add flour,
cinnamon, soda to egg mixture. Beat to mix. Add apples to
batter. Mix by hand. (You can add walnuts—1 c.). Spread
batter into a pre-greased 9X13 inch pan. Bake at 350
degrees for 1 hour. Cool. Spread with Cream Cheese Icing.

For icing: Beat cream cheese and butter until fluffy. Add
powdered sugar, lemon juice or vanilla. Beat until fluffy.
Spread on cake.
