1 package lemon cake mix 1 egg; slightly beaten 1/2 c. vegetable oil 2 tbsp. water 1/3 c. pecans; chopped
Glaze: 1 lemon 1/2 c. powdered sugar
Mix cake mix, egg, oil and water in large bowl until combined (mixture will be dry). Stir in chopped pecans. Roll into balls and place on cookie sheet or baking stone. Bake in a preheated 375º oven for 13 minutes or until lightly browned. Cool on wire rack.
Remove zest from lemon and juice the lemon. Mix together zest, juice and powdered sugar until smooth. Drizzle over cooled cookies.
These cookies get very hard so I put a piece of white bread in the container and they stay nice and soft.
