8 oz. cheddar cheese, grated
12 oz. cream cheese
Onion salt—a sprinkle or two or three
Paprika—generous sprinkles
Crushed Pecans, optional
Ritz Crackers for serving

Directions:
Directions:
Use a fork to combine the cheese and cream cheese in a mixing bowl. Add spices as you mix. You can change the cheese/cream cheese proportions any way you want to—add cheddar if too soft, cream cheese if too hard. Then take a rubber spatula and pull away from the sides to form a ball. You can either mix pecans in the cheese ball and/or roll finished cheese ball in nuts. Place bowl in the refrigerator for an hour or so, and mold into a ball after it stiffens.

Wrap the finished cheese ball in saran and place in Tupperware. Sprinkle outside with paprika before serving. This is better if is sits out about an hour before serving so it isn’t too stiff.

Variations to fit the occasion:
Tailgating: Shape into an oval like a football. Use pretzel sticks to make ‘football markings’ on top of the cheese ball: —l—l—l—
Halloween: Make scored indentations in the cheese ball like a pumpkin. Press a broccoli stem minus the florets into the center for the stem of the pumpkin.
Christmas: Make a snowman by shaping three balls in graduated sizes. Use pretzels for arms, etc.
