1/2 onion, chopped
2 T. olive oil
2 ripe mangoes, pealed and diced
1 red pepper, chopped
2 T. chopped cilantro
2 T. fresh lime juice
1/2 tsp. salt
1/4 tsp. pepper
1 T. minced green onion

Directions:
Directions:
Saute onion in olive oil until translucent. Toss all ingredients together. Serve with tortilla chips.
