Pancakes:
1 1/2 c. flour
1 t. baking powder
2 t. pumpkin pie spice
1/2 t. baking soda
1/4 t. salt
1 egg
1/3 cup canned pumpkin
1 3/4 c. milk
3 T. cooking oil
3 T. brown sugar

Syrup:
1 c. water
1/2 c. sugar
1 T. cornstarch
2 T. butter
2 t. vanilla

Pancakes:
Stir together flour, baking powder, baking soda, salt and pumpkin pie spice. In another bowl, beat the egg, canned pumpkin, milk, oil, and sugar. Add the flour mixture to the milk mixture and stir until just blended. Pour about 1/4 cup of batter for each pancake onto hot griddle. Cook over medium heat until browned. Serve with vanilla syrup.

Syrup:
Cook water, sugar, and cornstarch until thick and bubbly. Take off the heat and add the butter and vanilla. Stir until well blended.
