1 pkg. white or yellow cake mix
1 tsp. baking powder
1-1/2 tsp. cinnamon
2 tbsp. flour
1/2 c. packed brown sugar
3/4 c. milk
3 eggs
1/3 c. vegetable oil
2 c. shredded zucchini
Nuts or raisins (optional)
Directions:
Directions:
Combine cake mix, baking powder, cinnamon, flour, and brown sugar in a large bowl; set aside. Beat together milk, eggs and oil. Add to dry ingredients & stir just until moistened. Fold in shredded zucchini (& raisins or nuts if using). Spoon batter into muffin cups, filling 2/3 full. Bake at 350º for 18-21 minutes. Makes 24 muffins.
