1-1/4 lb. pork tenderloin
2 tbsp. butter
1 package of herb flavored stuffing mix
1/2 c. chopped apple
3 tbsp. apple juice
Salt and pepper to taste

Directions:
Without cutting completely through, split tenderloin lengthwise. Beat meat until 1/2" thick. Melt butter and combine everything but the meat. Spread the stuffing on top of the meat approximately 1/2" thick. Roll up the meat and tie with string. Cook in smoker with hickory chips 8-10 hours or until meat thermometer reads 160º.
