1 1/2 cups flour
1 1/4 cup sugar
1 1/2 tsp cinnamon
1/4 tsp salt
2 jars (4 1/2oz@) strained carrots, baby food)
2/3 cup crisco oil
2 eggs slightly beaten
1/2 tsp vanilla
1 can (8oz) crushed pineapple, drained
2/3 cup coconut
1/2 cup chopped walnuts

In 8" or 9" square pan, with fork mix well, flour, sugar, baking soda, cinnamon and salt

Add carrots, oil, eggs and vanilla

Mix briskly with fork til blended.

Stir in pineapple, nuts and coconut

Bake @350 for 45 minutes
