4 c. cubed chicken (about 6 chicken breasts)
1 box of Uncle Ben’s Long Grain & Wild Rice
Poultry seasoning
1 can of sliced water chestnuts
1 c. broken cashews or walnut pieces (optional)
½ c. golden raisins
2-3 stalks of celery
1 medium Onion

Directions:
Directions:
Chop celery and onions. Cook in canola oil until translucent – let cool

Cook chicken using chicken boullion, a few carrots and an onion; skin and cube the cooked chicken

Cook rice according to package

In a large bowl, combine chicken, rice, water chestnuts, cooled celery and onions, nuts and raisins.

Mix through and season to taste w/ poultry seasoning

Serve room temperature or warm
