1 -8 oz. pkg. cream cheese, softened,
2/3 C. sour cream,
5 med. boiled eggs, chopped
1 small purple onion (1/2 C.) chopped,
3 Tbsp. mayonnaise,
1 small jar caviar ( red or black),
parsley/lemon wedges as garnish

Directions:

Soften and mix the cream cheese and sour cream, Set aside. Mix in a separate bowl the 5 chopped boiled eggs with the mayonnaise.
Spread that into the bottom of a lightly greased glass pie pan or quiche dish.
Sprinkle a layer of the chopped purple onion over the eggs mixture.
Add a layer of cream cheese and sour cream mix.
Top this with a sprinkling of the caviar and garnish with 4-6 lemon slices and parsley leaves around the edges. Chill overnight or 6-8 hrs. Serve with crackers, Melba rounds, or plain toast.
