8 in. graham cracker pie crust,
1 can sweetened condensed milk
4 medium eggs
1/3 C. key lime juice
salt- tiny pinch
1/2 tsp. cream of tartar, 4 tsp. sugar

Directions:

Separate eggs into a glass or stainless steel bowl

Beat the yolks while adding the milk.

Gradually fold in the lime juice.

Pour into prepared pie shell (follow dir. on shell).

In another small bowl, beat the egg whites until stiff

Add a pinch of salt and cream of tartar. Stir in sugar. Stop when whites are firm and hold peaks.

Top the pie with meringue. Bake in a preheated 350 degree oven only until light brown.

Chill one hour or more before serving.
