4 lb. pork roast
1 onion, white, diced
2-3 tsp. garlic salt
1 tsp. pepper
2 lbs. Anaheim peppers, diced, frozen (or 5 4-oz. cans of mild chiles)
1 or 2 jalapenos or 1-4 oz. hot chiles
8 c. water

Cut the pork into quarter size or a little bigger pieces leaving a little fat on the meat. Brown the pork in a skillet and as it is browning season with garlic salt and pepper. After browning pork, put in a stockpot or crockpot. Add diced onion, 2 lbs. Anaheim chiles and 4 cups water to pork. Simmer until onions are done. Taste green chile. Add more garlic salt and pepper, if needed.
You can make your own by changing types of chiles (hotter chiles) or by adding more pork.
You can thicken green chile by using 12 tbsp. flour mixed with 2 cups cold water. Pour into chile and bring to a boil.
