2/3 c. flour
1 c. sugar
1/8 tsp. salt
2 c. hot water
2 egg yolks, slightly beaten
1 tbsp. butter
1/3 c. lemon juice
Grated rind from 1/2 lemon
2 tbsp. powdered sugar
2 egg whites
Pastry shell(s), baked according to package directions

Mix together flour, sugar, and salt. Add water gradually, stirring until smooth & free from lumps. Cook over boiling water in double boiler until thick and smooth, stirring constantly to prevent lumping. Remove from heat, pour over beaten egg yolks. Return to double boiler and cook 1 minute. Add butter, lemon juice, and lemon rind. Mix well. Pour into baked pastry shell(s). Beat egg whites until stiff. Add powdered sugar gradually, beating constantly. Pile meringue on top of pie filling. Bake in slow oven (325) for 15 minutes or until firm and brown.
