5 tbsp. cornstarch
1-1/4 c. sugar
2 c. hot water
2 egg whites, stiffly beaten
1 tsp. vanilla
1/4 tsp. almond extract
1/4 c. cream, whipped
1 pasty shell, baked according to package directions
3/4 c. cream, whipped
1/4 c. finely chopped walnuts, toasted

Combine cornstarch and sugar in top of double boiler. Add water gradually, stirring constantly until it has become thickened and transparent. Continue cooking for about 20 minutes, stirring occasionally. Beat hot mixture gradually into egg whites, beaten stiff but not dry. Continue beating until all has been added. Cool.

Add flavorings. Carefully but thoroughly fold in 1/4 cup cream, whipped. Pour into baked pastry shell. Place in refrigerator until pie has set. When ready to serve, garnish with remaining whipped cream and sprinkle generously with toasted nuts.
