Ingredients: 6 apples, peeled and sliced 1 heaping cup of flour a pinch of salt 2 teaspoons baking powder 2 tablespoons butter 1 egg, beaten in a 1 cup measuring cup milk to add to the egg to make 1 cup

Directions:1. Combine dry ingredients and butter. 2. Add liquid ingredients (milk with egg). 3. Pour into greased, square baking pan (8x8" or 9x9"). 4. Layer apples over batter. Dot with butter and cinnamon-sugar. 5. Add another layer of apples, butter cinnamon-sugar. 6. Repeat with a third layer of apples, butter and cinnamon-sugar. 7. Bake at 450º covered with foil for 15 minutes. 8. Remove foil and bake for 45 minutes at 350º
Best served warm with a dollop of whipped cream. |

Notes: Jo's "German Apple Cake" was one of those recipes that she didn't actually have written down. I had her create the cake while I jotted it down, so it may not read as well as a formally written recipe. I was always impressed with how beautifully the apples were layered when she made this cake. (Mine never came out quite as artistic!) She loved to bake! This cake would often be dessert after a meal at her apartment, where her favorite company dinner to prepare was roasted Cornish game hens! (Again, no recipe exists for how she prepared them, but she did put slices of apple inside as they roasted.)
