2 c low fat cottage cheese
2 whole eggs (beaten)
1/4 c lemon juice
2 bunches washed, chopped spinach, (or 1 10 oz package of frozen spinach)
1/2 c plain yogurt
1/2 c whole wheat bread crumbs

Directions:
Directions:
Cook spinach until just wilted; remove excess moisture. Mix spinach, eggs, lemon juice, yogurt and cottage cheese. Place in a greased 8 X 8 baking pan. Top with bread crumbs.

Bake at 350 for 30 minutes or until set.
