2 chicken breasts, 1/4 c butter
salt and pepper to taste, 1 egg (beaten)
seasoned bread crumbs, 2 cloves garlic, mashed
1/4 tsp. thyme, 1/4 tsp. oregano
1 jar (about 24 oz.) tomato sauce
1 pkg. sliced mozzarella cheese
1 c grated Parmesan cheese
1/2 c red wine, 8oz. package spinach pasta

Beat chicken breasts until about 1/4 inch thick .
Salt and pepper them and then dip in egg and bread crumbs.
Melt butter in large frying pan (with lid) and brown the chicken.
Top with the garlic pieces, thyme and oregano.
cover all with the jar of tomato sauce and wine and simmer, covered for 20 minutes.
Then add the slices of mozzarella and Parmesan and cover for another 5-10 minutes until cheese has melted.

Serve over Spinach pasta.

This recipe was originally found in a "30 minutes meals" article in a popular women's magazine in the early 70's. Joe and I had four small children at that time and had recently moved away from home. We really couldn't afford to go out to eat so this was our "date night" dinner. We would put the children to bed and fix our special meal in "30 minutes". It goes very well with some wine ( at the time we were drinking a very inexpensive bottle of cold duck) and a salad. We still make this dish from time to time and it brings back some fond memories.
