Ingredients: 4 chicken breasts, 4 med. sized potatoes Garlic powder (4 tsp), 2 lg. lemons. Greek Seasoning mix (I like Cavenders brand). Salt / Pepper, 2 tsp parsley flakes. Extra Virgin Olive Oil (3 tbsp),

Directions:lightly coat chicken breasts with Olive Oil in med baking or casserole pan. season with Garlic, salt, pepper, Greek seasoning and parsley flakes. Cut potatoes into eighths, season with same mixture as above, then arrange around chicken breasts. Squeeze one lemon over chicken and potatoes in pan, cover lightly with Tin Foil (shiny side down)and bake in 375º oven for 75 minutes, basting with remaining lemon about 50 minutes into baking. Uncover last 10 minutes to brown chicken and potatoes. Great with Asparagus or other fresh green vegetable. |

Notes: The Rivers family has a lot of ethnic heritage behind us and we cook accordingly. From Southern to Spanish, Cuban to Creole, we just plain love to cook. This dish was another of Dad's (Bill Rivers) favorites. He adopted it from Pappas restaurant's version in Tarpon Springs Florida. The more Lemon and Garlic in the recipe the better, as far as Dad was concerned. Trust me, no Vampires ever hung out around Our homes! Whenever our families get together, the food just tastes better, regardless of the Cuisine! It's extra tasty thanks to that secret ingredient, a Family's Love!
