Cake:
2/3 c. solid pumpkin
3 eggs
1 c. sugar
1 tsp vanilla
3/4 c. flour
1 tsp ginger
2 tsp cinnamon
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
1 c. chopped nuts
Filling:
1 c. powered sugar
4 Tbsp butter
1/2 tsp vanilla
2 3 oz pkgs cream cheese.

Beat eggs on high speed 5 minutes. Gradually beat in 1 c. sugar. Stir in the pumpkin and vanilla. Sift together flour, ginger, cinnamon, baking powder, nutmeg and salt. Fold in first mixture. Spread on a cookie sheet (greased and floured). Sprinkle 1 cup chopped nuts on top. Bake at 375º for 15 minutes. When done, flip cake on dish cloth sprinkled with powered sugar. Roll up and cool.
Combine filling ingredients and beat until smooth. Unroll cake on towel and spread with filling. Roll back up and refrigerate.
