2 T. olive oil
2 c. chopped onions
2 large garlic cloves, chopped
1 T. chopped fresh thyme or 1 tsp. dried
1 T. fresh chopped oregano or 1 tsp. dried
1/2 to 3/4 tsp. dried crushed red pepper
1 28-ounce can diced tomatoes in juice
1 t. sugar
1/4 cup chopped fresh Italian parsley
3/4 pound penne, freshly cooked
Grated Parmesan cheese

Heat oil in heavy large pot over medium heat. Add onions and garlic; sauté until onions are soft, about 6 minutes. Add thyme, oregano and crushed red pepper; stir 1 minute. Add tomatoes with juices and sugar. Simmer until sauce thickens slightly, about ten minutes. Mix in parsley, then pasta and toss to combine. Season pasta with salt and pepper. Serve, passing Parmesan cheese separately.
