Italian Chocolate Mousse Recipe

6 oz. Bittersweet Chocolate, chopped
4 eggs, separated
2 tsp. sugar
1/4 c. Strong Coffee (espresso)
2 Tbl. Amaretto
2/3 c. Heavy Whipping Cream, very cold

Directions:
Directions:
Bring about an inch of water to a simmer in the bottom of a double boiler; place the top portion over it. Place the chocolate inside to melt.
Combine the egg yolks and sugar in a large bowl and whisk until pale yellow and creamy. Stir in melted chocolate, then add coffee and amaretto. Mix with a spatula until smoothly combined.
Beat cream until it stiffens, then gently fold into the chocolate mixture with a spatula.
In a medium bowl, beat egg whites until they form stiff peaks, then gently fold into the chocolate mixture.
Spoon mousse into individual serving cups or martini glasses, cover with plastic wrap and refrigerate overnight. Serve within 24 hours and garnish with whipped cream and chocolate shavings.
