1lb boneless, skinless chicken (breast/thigh or both), cooked and chopped up
( i usually poach them with lots of Tony's and water or chicken broth)
1 bell pepper, seeded and finely chopped
1 yellow or white onion, finely chopped
2-3 tbsp garlic or 3 or 4 cloves minced
3 cans cream of chicken soup
1 bag fajita or taco seasoning
1 bag or block of sharp cheddar or mexican mix
3-4 cups water or chicken broth
salt and pepper
1/2 stick unsalted butter (when I double the recipe, I don't double this)

Directions:
Directions:
Saute garlic, onion, pepper in pot over medium heat with butter. Season with salt and pepper. When they are soft, about 7-10 minutes, stir in chicken and seasoning packet. Stir to mix well, then add soups. Stir again and add water until you get the consistency you like. Simmer on low for about 10 or 20 minutes, adjusting flavor/heat and serve topped with cheese.
