1 stick butter
1 small green onion, chopped
˝ cup finely chopped parsley
2 Tbsp. flour
1 pint cream
˝ lb grated Swiss cheese
1 Tbsp. sherry wine
Red pepper and salt to taste
1 pound white crab meat

Directions:
Directions:
Melt butter in a heavy pot and sauté onions and parsley. Blend in four, cream, and cheese until cheese is melted, add wine, salt, and red pepper. Gently fold in crab meat and heat through. Serve in a chaffing dish with crackers, pastry shells, or toast cups.
