3/4 c. butter
3/4 c. white sugar
3/4 c. packed brown sugar
2 large eggs
1 tsp. vanilla
1 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt
2 3/4 c. quick cooking rolled oats
1 c. dried Cranberries
1 c. chopped walnuts

1. Preheat oven to 375 F.
2. Combine shortening and sugars in large bowl. Beat at medium speed with electric mixer until well blended. Beat in eggs and vanilla until well blended.
3. Combine flour, baking soda and salt in a small bowl. Stir into creamed mixture; mix well. Add oats, dried cranberries and walnuts. Spray cookie sheets with cooking spray. Dust with flour. Drop dough by teaspoonfuls about 2 inches apart onto prepared cookie sheets. Bake at 375 for 8 minutes or until firm and brown. Cool on cookie sheets 4 minutes and transfer to wire rack.
