3 c. Milk
1 c. Whipping Cream
1/2 c. short-grain rice (Arborio or Italian Style)
1/4 c. packed brown sugar
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 cup raisins (optional)
1 tbsp. vanilla

Directions:
Directions:
1. In a heavy saucepan, bring Milk, Whipping Cream, rice, sugar, cinnamon and salt to a boil over medium heat, stirring often.
2. Reduce heat to low; cover and simmer, stirring occasionally for 20 min. Stir in raisins.
3. Cover and simmer stirring occasionally, for 5 more minutes or until rice is very tender. Stir in vanilla. Serve warm or cold.

This pudding thickens as it cools. You may add more Milk if necessary. This is the best Rice Pudding recipe we have ever tasted! The Whipped Cream is extravagant, but well worth it.
