1 c. buttermilk (or soured Milk)
1 c. quick cooking rolled oats
1/2 c. grated peeled apple
1/4 c. packed brown sugar
1/4 c. melted butter or veg oil
1 egg lightly beaten
grated rind of 1 lemon
1 c. all purpose flour
1/4 c. white sugar
1 tbsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. dried cranberries
1/2 c. chopped walnuts

Directions:

1. Preheat oven to 400 F. Lightly spray muffin tins.
2. In large bowl, pour buttermilk over oats; stir to combine. Let stand for 10 minutes.
3. In separate bowl, mix together apples, brown sugar, butter, egg and lemon rind. Stir into oat mixture.
4.. Sift together flour, sugar, baking powder, salt and baking soda; stir until just moistened. Gently stir in cranberries and walnuts.
5. Spoon into prepared pan.
6. Bake for 20-25 minutes or until tops are firm.

In my oven, these only need to cook 18 minutes, please keep an eye on them, they brown quickly.
