Bacon Fat or Salt Pork
Onion
Tomato, peeled and chopped
Basil
Parsley
Canellini or Navy Beans
Celery
Pasta
Salt and Pepper to taste
Olive oil
Freshly grated Parmesan or Romano

Directions:
Directions:
Soak and cook the white beans with the celery until done. Set aside.

Saute the bacon fat or salt pork in a pan until nearly done. Add the onion and cook until translucent. Add chopped tomatoes and cook until heated through. Season with salt, pepper, basil and parsley. Set sauce aside.

Cook pasta of choice until al dente. Set aside and keep warm.

To serve, place pasta in serving dish or on serving platter, top with sauce and beans and a dash of Olive Oil. Enjoy with freshly grated Parmesan or Romano cheese.
