1 1/4 c. sugar
2 c. all purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. carrots, grated
1/2 c. raisins
1/2 c. pecans, chopped
1/2 c. sweetened coconut
1 apples, peeled and grated
3 eggs
1 c. vegetable oil
2 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º F. Sift sugar, flour, baking soda, cinnamon and salt together. Stir in carrots, raisins, pecans, coconut and apples. Beat eggs with vegetable oil and vanilla. Stir into flour mixture until just combined. Spoon batter into well-buttered muffin tins, filling to the top. Bake for 35 minutes or until springy to touch.
Makes 12-15 muffins.
