1 lb. dried black beans, rinsed in cold water, picked over, and soaked overnight in cold water to cover by 1and 1/2 inches (remove any beans that float to the top)
1 bay leaf
1 medium-size green bell pepper, seeded and cut into quarters.
For the sofrito:
2/3 c. olive oil, 1 onion chopped
1/2 green pepper seeded and chopped
3 cloves garlic, chopped, 1/4 tsp. oregano
1/4 tsp. cumin, 1/4 tsp. dried red pepper flakes

The night before, rinse beans in cold water, pick out any stones. Place in a crockpot, and cover with water by 1 1/2 inches (remove floaters). Add bay leaf and green pepper to the beans. Cook on low over night. In the morning, strain the beans and cover with water again by about 1 1/2 in. Prepare the sofrito and add to the beans. Add salt to taste.
Cook on low or high depending on the time you want beans to be ready. On low it takes six hours. On high about four hours. When beans are tender, add a small amount of vinegar or 1/4 c. of dry sherry wine to finish.

Amparo (Pauline) Jeronimo Garcia (mother of Mickey and Gloria) was born in Tampa in 1911. Her parents were Virginia and Juan Jeronimo. Pauline had one sister Virginia, and two brothers, Alex and Robert. The family lived in Tampa most of their lives except for a short period in New York (during the cigar factory strikes). Pauline met Mike Garcia while in her 20's and they were married in 1939. Mom and Dad lived in Tampa Heights most of their lives. Mom would prepare this recipe when she visited Gloria in Atlanta. Being the expedient person she was, she found using the crock pot worked very well in our busy lives.
Mom never cooked with a recipe and she rarely used the oven. Most of her dishes were prepared on the stove. She could make boliche or flan on the stove top and whether meat or dessert it would come out just right and be delicious.
