8 medium ears corn with husks
1to 2 limes
1/2 cup butter (1stick), softened
1/2 cup loosely packed fresh cilantro leaves
1/8 teaspoon ground black pepper
1/8 teaspoon salt

Directions:
Directions:
1. With kitchen shears, cut off silk end from each ear of corn. Place corn with husks in large saucepot or bowl. Add enough water to cover corn. Let them soak for about 1 hour.

2. Meanwhile, from limes, squeeze 2 tablespoons juice. In blender or food processor, pluse lime juice, butter, cilantro, pepper, and salt until completely blended. Spoon butter mixture into serving bowl.

3. Prepare outdoor grill for covered direct grilling over medium heat.

4. Remove corn from water; drain well. Place corn on hot grill rack. Cover grill and cook corn 15 to 20 minutes or until husks are charred, turning frequently.

5. Remove corn from grill and cool slightly. With towel or oven mitt peel back husks; remove silk. Place corn on platter; serve with cilantro-lime butter.
