1 16oz. package pasta of choice
1 lb. andouille sausage, quartered
1 lb. boneless skinless chicken breast, cut into chunks
2 tsp. Tony's Chacares
1 tsp dried sage
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped red bell pepper
1 tbsp. finely chopped garlic
2 10oz. containers Alfredo sauce, divided
1 1/2 c. shredded Mozzarella cheese
1/2 c. grated Parmesan cheese

Preheat oven to 325. Boil pasta as directed on package and drain. In a large skillet over medium heat, combine andouille, chicken, Tony's and sage. Cook until chicken is no longer pink and juices run clear. Remove meat from skillet with slotted spoon and set aside. Saute onion, celery, bell pepper and garlic until tender. Remove from heat and stir in cooked meat and one container of Alfredo sauce. Lightly grease a 9x13 baking dish. Put meat mixture and pasta in dish. Add remaining Alfredo sauce. Mix well. Top with mozzarella cheese and sprinkle with Parmesan cheese. Bake in preheated oven for 1 hour. Let stand for 15 minutes before serving.
