2 C flour
2 C sugar
2 t baking soda
2 t baking powder
3 C grated carrots
2 t cinnamon
1 t salt
1 1/2 C oil (canola or similar)
4 eggs

1 8-oz pkg cream cheese
1 stick unsalted butter
2 t pure vanilla extract
1 box powdered sugar
1 C chopped nuts

Mix oil and eggs. Add carrots. Mix dry ingredients and add to carrot mixture. Pour into greased cake pan (or a few greased loaf pans). Bake at 350 for 25-30 min. Cool cake

Topping- mix all ingredients except nuts. Beat mixture. Spread on cooled cake, top with nuts.

**Make sure there is about an inch from the cake mixture to the top of the cake pan bc it rises a lot.
