1/2 c. cooked rice
2 tbsp. butter
1/2 c. sugar
1 tsp. vanilla
3 c. milk
3 eggs
1/2 tsp. salt
1/8 tsp. nutmeg

Directions:
Directions:
Cook rice; spoon into greased 1-1/2 quart casserole. Scald milk with butter. Beat eggs with sugar, salt, nutmeg and vanilla in medium bowl. Slowly stir in milk. Strain over rice; stir well. Sprinkle with cinnamon/sugar mixture. Place baking dish in shallow pan and pour boiling water into pan to depth of 1". Bake at 325º for 40 to 45 minutes.
