1-4lb. boneless pork roast
Salt and pepper
1/2 lb. fresh spinach
2 hard boiled eggs, chopped
1/4 lb. prosciutto, chopped
1 tbsp. chopped parsley
2 cloves garlic, chopped
Olive oil
Garlic
Oregano

Directions:
Directions:
Split pork roast lengthwise; season with salt and pepper. Combine filling mixture. Arrange on outside of roast. Cover with other half and tie with string. Rub with olive oil, garlic and oregano. Roast covered for 45 minutes at 325. Remove cover and roast another hour.
