The secret to grilling ribs to perfection is a fire that isn’t too hot. The ribs need some time on the grill to become tender, and with all of the fat in the ribs, if the heat were too hot they would just end up being one big piece of char. Please, keep the heat moderate to low when grilling these perfect pieces of pork.

The Rub
4 Tablespoons of sugar
4 Tablespoons of paprika
4 tablespoons of salt
4 Tablespoons of pepper
2 Tablespoons of ground cumin
1 tablespoon of ground ginger
1 tablespoon of chili powder

The Mop
½ cup of vinegar
¼ cup of lemon juice
2 Tablespoons of Worcestershire Sauce

Directions:
Directions:
Mix all of the rub ingredients together, Generously, put the rub on both sides of the ribs and let it sit in the fridge a few hours. Prepare your grill for medium heat and grill the ribs directly over the heat. Combine the ingredients in the mop. Flip the ribs every 15 minutes, and baste both sides of the meat with the mop. Total Grilling time is about an hour of 20 minutes. Don’t get to comfortable, these can burn fairly easily so don’t venture too far away from the grill.
