5 T. butter
1/2 lb. mushrooms, coarsely chopped
1/2 cup finely crushed saltine crackers
3/4 cup chopped green onion
2 cups (8 oz.) shredded jack or Swiss cheese
1 cup cottage cheese
3 eggs
1/4 t. cayenne pepper
1/4 t. paprika

Directions:
In a frying pan over medium heat, melt 3 T. of the butter; add mushrooms and cook until limp. Stir in crushed crackers, then turn mixture into a well-greased 9 inch pie plate. Press mixture evenly over pan bottom and up the sides.
In same frying pan over medium heat, melt remaining 2 T. butter; add onion, and cook until limp. Spread onions over mushroom crust; sprinkle evenly with shredded cheese.
In a blender, whirl cottage cheese, eggs, and cayenne until smooth. Pour into crust and sprinkle with paprika.
Bake in a 350 oven for about 20-25 minutes or until a knife inserted just off center comes out clean. Let stand for 10-15 minutes before cutting.
