2 c. hot or cold mashed potatoes
8 oz. light cream cheese
1 small onion, finely chopped
2 eggs
2 T. flour
salt and pepper to taste
1 can french fried onion rings (optional)

Directions:
Directions:
Put potatoes into large bowl of mixer. Add cream cheese, onion, eggs and flour. Beat at medium speed until light and fluffy. Add salt and pepper to taste. Spoon into greased 9 inch square baking dish. Top w/ canned onion rings, if desired. Bake, uncovered, at 350º for 35 minutes.

You can double the recipe and bake in deep casserole (1 1/2 to 2 qt). Double baking time or bake unitl puffy and set.

You can use baked potatoes or buy ready-to-cook potatoes like "Simply Potatoes" products to save time.
